Pineapple Cherry White Chocolate Chip Cookies

I love to bake but for some reason cookies are my least favorite dessert item to make. I think it's because I like something I can put in the oven and walk away from for 25-30 minutes. I tend to burn cookies, especially now that I am down to one cookie sheet. I got a silicone baking mat a few years ago and it has helped a lot.

I love trying new recipes, however. Especially ones that leave room for controlled experimentation. What I don't love are recipes embedded in websites/blogs with hundreds of ads, anecdotes, and photos. I will keep this brief-- I respect the fact that some people want a recipe without a backstory or a life saga.

Here is the link for the original recipe. I am not criticizing the blog it came from--believe me. I just thought it would be easier to link it and then explain what I did differently! Her photos are amazing and make my mouth water-- can't say the same for the picture of my finished product!

I opted for a pineapple upside down cake mix, dried cherries, and white chocolate chips. For my rental oven, 9 minutes was a perfect amount of time to bake them.


Pineapple Cherry White Chocolate Chip Cookies Recipe:

Ingredients:
1 cake mix of your choosing
1/2 cup of melted butter (can sub in oil)
2 large eggs
1 cup of chocolate chips

Steps:

+Pour cake mix into a large bowl. Add butter and eggs. Mix well until it forms dough. Add in chocolate chips or nuts, dried fruit, etc.

+Make 2 inch balls and place on cookie sheet. Bake at 350 for 9 minutes or so.

+Let cool on tray and try to not devour all of them in one sitting while husband is at work!

+Store in an airtight container with a piece of bread to keep them soft!

I would add more cherries next time too!
